Duck Salmis with Ceps and Cahors Wine

Reheat our authentic recipe in traditional oven : the Duck Salmis with Ceps and then enjoy the exquisite flavours of the Quercy-Périgord cooking.
Advice
in an ovenproof dish and heat 15 to 20 minutes (180°C). Serve accompanied with steam boiled potatoes or freshly made noodles.
Ingredients : Filling : fattened duck leg (53% jar, 47% tin), ceps 4%.
Sauce : duck stock, Cahors wine 16%, onion, wheatmeal flour, duck fat, modified starch, tomato concentrate, salt, sugar, cornflour, pepper.

Each speciality is produced with the freshest raw agricultural commodities that have been strictly selected and is prepared on a very traditional way following the oldest recipes, which are the heritage of the gastronomic know-how of our region.  
Chaudron du Terroir's quality commitment gives you the assurance that its foie gras come exclusively from ducks and geese that had been raised in the open air and fed with maize by talented “gaveurs” in the South-West. The IGP (Protected Geographic Identification) certification proves the origin of the ducks. Besides, our very well controlled traceability attests the Périgord origin of our goose foie gras.
 
As Chaudron du Terroir very often obtains many medals at the national agricultural fair in Paris, she is rewarded  for its own quality requirements. Those medals recognize our know-how and symbolize day after day the excellence and the regularity of our specialities that are always prepared on a very authentic way.
